Lassi– Summer cooling drink, digestive aid, delicious with meals.

Try this recipe for Lassi (pronounced “LAH-see”) is a delicious and simple summer drink. Lassi is fresh yogurt blended with spices and select plants in room temperature pure water. According to Ayurveda, Yogurt by itself can clog the channels of the digestive and elimination systems, but when transformed into lassi it actually aids digestion. Thinning yogurt with water and blending it changes the molecular structure so it is more easily assimilated.

Enjoy your lassi before or with lunch and dinner.

MINT LASSI – 2 Servings

1/2 teaspoon ground cumin
3/4 cup yogurt
2 cups water
1/2 teaspoon salt
1/3 cup loosely packed fresh mint leaves

Toast the cumin in a small pan over a low heat, stirring, until fragrant and slightly darkened. This will take about 30 seconds. Remove from the heat immediately and place in a blender-or use a stick blender. Add the yogurt, water, salt, and mint. Blend for 30 seconds or until the mint is well blended in.
